Foodie Friday – Bridal Shower – Recipe Apricots with Goat Cheese, Honey and Pistachios

I had the wonderfully fun opportunity to host my future daughter-in-law’s bridal shower this past weekend.  I wanted the affair to be based on a several elements – outdoors, gardens, blushing bridal pink colors, and foods from the honeymoon destinations.   So with a little help from Pinterest and dreaming a bit in my head, plans began to be created back in February of this year.

While searching for ideas which encompassed the elements I was envisioning, I found pictures of a French Garden Shower that included beautiful white teapots that were decorated with moss under the lids, and sat on top of each person’s place setting.  The minute I saw these pictures, a “look” started to form in my mind and I was off on an adventure of finding individually unique white teapots for each guest.   Each find added to the excitement of preparing for the day.

With the style of decorating chosen, my husband and I began to discuss the food that we would serve.  We thought it would be exciting for the bride and her guests to experience foods from the honeymoon destinations she and her groom will be visiting on their 16 day trip through Europe. It was really difficult to narrow down the menu, as every recipe we considered sounded absolutely delicious.  In the end, we settled on at least two dishes from each country.  We also considered that it would be hot outside and thought that “cold” dishes would be refreshing.

One of my favorite bites was the one you see on the top tray of the three tier plate.  These are dried apricots filled with goat cheese, drizzled in honey, and sprinkled with pistachios.  This dish is so simple to make.  Take as many dried apricots as you want to serve.  Place them on a plate with the indented (from pit removal) center facing upward.  Take the goat cheese and put it in a mixing bowl. (The amount you will use will depend on how many apricots you are filling – a little goes a long way – these are quite miniature bites) Add milk in small increments, mixing with beaters, until you get a consistency similar to frosting.  Place cheese mixture into a pastry bag with tip.  Pipe the cheese into indented center of apricot.  Drizzle with honey and pistachios.

Next week I will share with you the easiest and tastiest tea sandwiches that were an absolute hit.  We were eating them as fast as we were preparing them in the kitchen and needed to remind ourselves that they were needed for the shower!
