Foodie Friday – French Toast Sandwich Stuffed with Bananas

I love breakfast.  I love a quiet Saturday morning with my husband.  When you put the two together, my heart melts and all seems right with the world.  Recently, my husband and I joined forces in the kitchen and fixed this for breakfast.  An extra treat – having our daughter join us.  We are soaking up the last days before she leaves home for her final year of college.  I wanted the breakfast to be really special where we could relax and enjoy connecting with each other.  The meal was perfect.  Sunny day.  Sitting outside on the patio.  Lingering long with coffee.  Talking about dreams and plans.  Enjoying our daughter who is so delightful!

Don’t wait too long to fix this recipe for your own loved ones…and when you do….be sure to slow down and really enjoy each one around your table.

French Toast Sandwich Stuffed with Bananas

Ingredients:
2 Bananas cut in half lengthwise (peaches or strawberries and Nutella would be yummy too!)
4 slices Challah bread (or any kind of bread you like)
2 eggs
1/2 cup whole milk
1/2 teaspoon pure vanilla extract
1/2 teaspoon cinnamon
pinch salt
1 tablespoon butter
maple syrup
confectioner’s sugar

Directions:
In a bowl, whisk together eggs, milk, vanilla, cinnamon and salt. Soak the bread in the mixture for a few minutes or until bread is saturated. Melt the butter in a large pan and place two pieces of bread down until slightly browned. Turn over and then arrange bananas over the top. Add the other slice of bread and then flip the sandwiches. Use a heavy pan or a lid to press the sandwiches down to make them more like a panini. Brown each side of the sandwich. When both sides are golden, remove and add more butter, maple syrup and powdered sugar.
