Foodie Friday – Grilled Chicken and Pineapple Sandwich

Grilling is not just a summer activity around here.  I have been known to shovel a path to our outdoor grill during the winter just so I can enjoy a hint of smoke and outdoor deliciousness!  Today’s recipe is easy and really tasty. Just what you need when fall schedules have you running around.

Here’s how I prepare it:

Grilled Chicken and Pineapple Sandwiches

1.  Grill chicken breasts (I like to marinate mine with a southwestern tangy flavor.  I use Stubbs Chicken Marinade)

2.  Slice and grill pineapple.

3.  Just before serving, place the grilled pineapple on top of the chicken.  Take a slice of your favorite cheese and place it on top of the pineapple and let it melt just a bit.  For this dish, I usually use Fontina cheese because it is mild and really creamy.

4.  Serve.  It’s a super simple to make, but so very good!  I also like to use a honey mustard sauce on the bun.  Grab some fruit and raw veggies and you have got a great meal in no time at all.

    Yummers! Even my picky 8 year old said he loved it! I used Mcmormicks brown sugar and bourbon as marinade. Great marriage with pineapple!
