Foodie Friday – Peach Salad Dressing

I’m kind of addicted to peaches right now. I want them with every meal! The other day, my husband and I did a little experimenting in the kitchen and came up with a peach salad dressing that we just love. It is so delicious! If you don’t have an olive oil infused store near by, I have included an optional way of making some of this peach goodness!
Kathy’s Peach Salad Dressing
Ingredients:
- 1/3 cup peach infused white balsamic vinegar
- 2 Tbsp. basil infused olive oil
- 1 clove garlic, minced
- 1 tsp. honey
- salt and pepper to taste
Directions: Mix all the ingredients together and drizzle over salad.
For the salad pictured above, I also took ripe peaches, cut them in half, pitted them, brushed the outsides (skin on) with olive oil and grilled them before putting them on the salad. I also added slices of red onion, goat cheese and candied pecans. Oh my word….so good!
If you don’t have a store nearby with infused vinegars and olive oils, here is an optional way of making this recipe:
Ingredients:
- 1/3 cup of balsamic vinegar
- 1/2 peach, mashed until it turns into a paste
- 2 Tbsp. olive oil
- 4-5 basil leaves, crushed finely
- 1 clove garlic, minced
- 1 tsp. honey
- salt and pepper to taste
Directions: Mix all the ingredients together and drizzle over salad.
