Foodie Friday – Kathy’s Ice-Cream Dessert

There is nothing I like more than ice-cream.  When I discovered how easy it was to put this recipe together and then tasted it….well…I was over the moon in love with it!  I have been making this dessert for at least 25 years!!  Hard to believe!  Be warned – It’s addicting!!

Kathy’s Ice-Cream Dessert


  • 2 cups of flour
  • 1/2 cup of oatmeal
  • 1/2 cup brown sugar
  • 1 cup of butter, melted
  • 1 cup of pecans, chopped
  • 2 quarts ice-cream (use your favorite flavor – in the picture I used chocolate chip – I also recommend a really good quality of ice-cream)
  • 16 oz. Chocolate fudge sauce (I use Sander’s Dark Chocolate Hot Fudge Sauce)
  • Whipped Cream
  • Optional – strawberries or raspberries for garnishing


Mix flour, oatmeal, brown sugar, butter and pecans together.  Put mixture on a cookie sheet and bake at 350 degrees for 20 minutes, or until dry and crumbly.  Watch carefully so it does not burn.  Place 1/2 of the mixture on the bottom of a 9 x 13 inch pan.  Pat in down so that it forms a nice base.  Let cool.  Spread softened ice-cream on top of crumbs. Put in freezer until hard.  Remove from freezer and spread the fudge sauce on top of the ice-cream.  Top with other 1/2 of crumbs.  Freeze until you are ready to serve.
Note:  This can be made several days before you need to serve.  Just cover the dessert tightly while in the freezer.

      Hi Jill! Welcome to Grace Full Journey! This recipe is certainly a favorite of mine. Easy to make and one that I can prepare a few days in advance of serving. This makes my time with family or friends more enjoyable as I can be committed to time together rather than the kitchen.
